銀座の真ん中で酔っぱらった金三が暴れている所を中松警部に捕まる、銀座署に呼ばれた山岡と栗田は中松警部から金三について「筏屋」という鰻屋の板前であると聞かされた。
金三は１５歳の時に「筏屋」の先代に弟子入りして２５歳の時から先代に代わって実質金三が裂き方焼き方も取り仕切っていた。ところが先代が亡くなって若旦那が跡を継いだが、若旦那はいわゆる青年実業家でゆくゆくはチェーン店にして他の料理を加えて鰻割烹にするとおしゃっていた。そんなやり方じゃうまい蒲焼きは焼けっこねぇです、なかでもどうにもこうにも我慢ならなかったのは合理化のために炭を止めてガスで鰻を焼くんだって決めたことです。
金三「ガスで焼いた鰻なんて鰻じゃねぇんだ！！」
栗田「炭からガスに替えるというだけで大暴れするなんて、炭とガスの違いは、そんな大問題なのかしら」
中松警部は銀座の真ん中で刃物を振り回す本来は直ちにブタ箱入りだが、俺一人胸三寸に納めるつもりだが、金三の働き場所が問題。
金三は先代の恩になった、よその行くつもりはなく、鰻と縁を切って他の商売につく決心です。
中松警部は「筏屋」はニューギンザデパートに出店するが板前の金三がいないのに大変だろう。
山岡は板山社長の所へ「筏屋」に対抗して出店をお願いに行った。
金三に「筏屋」の出店するグルメストリートの隣接している「大江戸物産展」に参加して会場の一角に鰻屋を出す、板山社長は承諾した。
いよいよ金三の鰻屋を出店する。

グルメストリートの「筏屋」鰻割烹は開店早々大入り満員
若旦那は「うちの店は客の回転をよくするために注文を受けてから５分以内にしている、そのために炭を使うようなバカなことはしないガスの方が早いし手間もかかりませんからね。しかもあらかじめタレをつけて蒲焼きに焼き上げたのを温蔵庫にいれておき、注文が来次第それをもう一度軽くあぶれば出来上がりとうわけです。」
若旦那がもう一軒の鰻屋が金三の店に来た、うちの店と並んで店を張ってみりゃ金三の考えが古いことがわかるだろう。
山岡は客寄せ手伝い、換気扇を切った。
金三はダメですよ換気扇切っちゃ鰻を焼く煙が廊下に流れて行っちまう。煙が廊下を漂って行き、あちこちからお客さんが入って来た。
山岡はお客さんに鰻を選ばして「背中の色が緑がかった青、これはアオと言って鰻の中の特級品で黒い鰻よりうまい。裂くところから始めるので三十分以上かかりますが。」
お客さんもまともな蒲焼きは時間がかかることも承知しているよ。
山岡は「鰻屋は煙を食わせると昔から言われている、煙の匂いをかがされたんじゃ鰻好きにはたまらないよ」
「筏屋」鰻割烹は日を追って客足が落ちている一方だった、鰻屋金三は大繁盛、そこへ板山社長・中松警部が「筏屋」に来た。
中松警部「ちっともふっくらしちゃいねえ、おまけに中はベショベショだ、鰻の香ばしさがねえのに変に脂っぽい、まるで出来の悪い焼き魚よ！！」
そこに鰻屋金三の出前が鰻丼六人前が来た。
板山社長はあんな急ごしらえの「金三」の鰻なんか、おたくに比べたら食えたものじゃないということを、この中松警部にわからせてやろうとおもいましてな。さあさ若旦那もどうぞ、皆でこの鰻丼を笑ってやろうじゃないですか。
栗田「湯気がこんなに勢いよく！」
板山社長「「筏屋」の蒲焼きは湯気なんか立たなかったな。」
栗田「美味しい鰻がふっくらほこほこして、それで少しも脂っぽくない！」
板山社長「「筏屋」の鰻は玉ねぎの腐ったような匂いがするぞ。」
山岡「それはガスの匂いです。都市ガスにはガス漏れの際に人が気づくようにわざと匂いがつけてある、ガスで焼くとどうしてもその匂いがつく、しかもガスの成分は炭素と水素の化合物で、それが燃えると水蒸気が出る。」
中松警部「ベシャベャになる道理だ。」
山岡「一方、炭は純粋な炭素だから燃やしても炭酸ガスが出るだけで水蒸気は立たない、だから鰻がすっきり焼き上がる。赤熱した炭の上に鰻の脂とタレがかかって、それが焦げて上がった煙が鰻について、蒲焼きの香ばし香りが出来るんです、炭がなければこの香りはでない。」
山岡「そして鰻の風味ほど失われやすいものはない、炊き立ての熱い丼飯の上に焼き立ての蒲焼き、これが鰻を一番うまく食う方法だ。それに比べて重箱の中に飯と別に蒲焼きをいれたんじゃ、すぐに冷めて風味を失う。
栗田「見た目は上品だけど、味の方はおちてしまうのね」
山岡「作り置きしたのをあたためて直して出すなんて論外だ。鰻を一旦裂いたら渋滞なく白焼きして蒸して、タレをつけ焼いて、そのまま一気にだす。わずか一か所手を抜いただけでも、ただの焼き魚に墜ちてしまう。」
中松警部「「筏屋」と「金三」の客の入りが証明している、客はバカじゃねえ本物を選ぶのよ」
若旦那「昔の「筏屋」のやり方でやれ直します。」
金三も物産展が終わった後「筏屋」に戻ることになった。
まとめ
鰻の蒲焼きはガスで焼くとガスの匂いが移り変な匂いになり、しかも水蒸気が出て水っぽくなり焼き魚になってしまい、炭を使えば水蒸気が出ず焼き上がり、炭に鰻の脂とタレが落ちてそれが焦げて上がって煙が香ばしく出来上がる。
蒲焼きとご飯を別々にするより、炊き立ての丼飯に乗せた方がうまい。
